Why Sioux Falls' Best Restaurants Aren't Winning on Google

We recently set out to build a Fine Dining section for this directory. The bar we set was simple. A restaurant needed a 4.8 star rating or higher on Google to qualify. We expected this to be easy. Sioux Falls has a genuinely strong food scene, and we had a long list of restaurants that locals talk about constantly.

The search
We started with the names everyone in Sioux Falls would recognize. Minerva’s, a downtown institution since 1977. Parker’s Bistro, housed in a historic quartzite building and a repeat winner of Wine Spectator awards. Morrie’s Steakhouse, known for its white tablecloth service and Wagyu cuts. 22TEN Kitchen Cocktails, praised constantly for its inventive menu. Grille 26, a chef inspired spot with a loyal following. Maribella Ristorante, an upscale Italian restaurant from the team behind several respected Sioux Falls establishments.
Every one of these restaurants has a real reputation as one of the best places to eat in the city. Every one of them, when we checked their actual Google rating, came in somewhere between 4.3 and 4.7.
Only two restaurants in our entire search cleared 4.8, both featured in our Fine Dining section: Chef Lance’s on Phillips and Harvester Kitchen by Bryan. Both are newer, smaller, chef driven spots with a fraction of the review volume of the established names above.
Why this happens
The instinct is to assume a lower rating means worse food or worse service. We don’t think that’s what’s happening here, and the reviews themselves back that up. Read through the actual comments on any of these restaurants and the praise is specific and detailed. People remember the dish. They remember the server by name. The negative reviews, when they show up, tend to describe a single bad night rather than a pattern.
What’s actually happening is simpler and much more common than most restaurant owners realize. These restaurants are relying on organic reviews. A customer has an exceptional meal, and maybe they leave a review if they think of it later that night. A customer has one bad experience out of twenty visits, and they’re far more likely to open Google right then and there to vent.
This is the built in bias of passive review collection. Happy customers are busy living their lives. Frustrated customers are motivated in the moment. Left alone, that dynamic drags even genuinely excellent restaurants toward the middle of the pack, one review at a time, over years.
The restaurants that end up at 4.8 or higher usually aren’t better. They’re actively managing the moment a review gets written, instead of hoping it happens on its own.
What the newer restaurants did differently
The two restaurants that cleared our bar had something in common. Both are younger businesses, both smaller in scale, and both clearly built around a system for capturing feedback at the point of service rather than leaving it to chance. That’s not a coincidence.
